SORT-OF SHERBET SMOOTHIE

Makes about 2 (8-ounce) servings

This is the perfect smoothie for when you miss summertime, when you’re dreaming of sitting around the pool and the kids having popsicles. This will help if you’re having a fruity/sherbet kind of craving. A handful of strawberries has more vitamin C than an entire orange—so it’s good protection against summer colds, too! Speaking of C, the amount of vitamin C in baobab powder, made from baobab fruit from Africa, puts both oranges and strawberries to shame. A total superfood, it’s also packed with minerals like calcium, copper, iron, magnesium, potassium, and zinc. If its sour taste bugs you, add a little honey to counteract it. And if you’re not familiar with goji berries, try them out. They’re an excellent antioxidant and a great source of beta-carotene. If you want to make this smoothie a little more filling, you can add a little whey or rice protein powder.

 

1½ cups frozen strawberries

1 cup sliced frozen banana (about 2 small bananas)

2 tablespoons freshly squeezed lemon juice (about 1 lemon)

6 ice cubes

1 teaspoon baobab powder (look for it online if you can’t find it in your store)

1 teaspoon dried goji berries (optional; substitute for baobab if it’s unavailable)

2 to 3 tablespoons whey or rice protein powder (optional)

 

Toss all the ingredients into a blender and blend until smooth!
